6 servings – Peel and seed cantaloupe. Cut up into small pieces to fit into blender. Combine honey and water in medium saucepan. Stir over medium heat until honey dissolves. Transfer to 11×7 glass dish and chill until cold, about 2 hours.Puree cantaloupe in blender until smooth. Add to honey/water mixture and stir until well blended. Freeze until almost firm (overnight is fine), stirring occassionally if possible. Transfer mixture to a large bowl. Beat until fluffy with an electric mixer. Return to the freezer and freeze until firm
