Sweet Potato Chips

Ingredients

  • 1 sweet potato
  •  extra virgin olive oil
  •  sea salt
  •  white pepper

Directions

  1. Preheat oven to 375 degrees.
  2. Wash sweet potato thoroughly and slice very thin on a mandolin.
  3. Place in a small bowl and coat with olive oil. Mix well for even coverage.
  4. Season with sea salt and white pepper to taste.
  5. Spread in a single layer on a baking sheet.
  6. Bake for 25-30 minutes or until crisp and golden brown.
