Oatmeal Raisin Cookie – Dairy Free, Egg Free, Gluten Free

Oatmeal Raisin Cookie Recipe:

Oatmeal raisin cookies are one of my family’s favorites but we had to find a way to make them compatible for everyone.  It’s taken a while but I’m happy to present this version.  The oatmeal raisin cookie is soft on the inside and just crunchy enough on the outside.  Enjoy!

Ingredients:

  • 10 dates
  • 3 cups gluten-free rolled oats
  • ¾ cup brown rice flour
  • ¾ cup tapioca flout
  • 1 tsp cinnamon
  • ½ tsp baking soda
  • 1/8 tsp fine sea salt
  • ¼ tsp ground cloves
  • ¼ tsp nutmeg
  • 2 tsp baking powder
  • 2 scoops brown rice protein powder
  • ¾ – 1 cup maple syrup
  • ½ cup coconut oil
  • ½ tsp vanilla
  • 2 Tbs ground flaxseed
  • 1 cup raisins
  • 1/3 – ½ cup nuts of choice (optional)

Directions For The Best Tasting Oatmeal Raisin Cookie:

  1. Preheat oven to 375 degrees.
  2. Mix all ingredients together.  Make sure you blend very well.
  3. Bake for 7-10 minutes or until slightly browned but still soft to touch.
  4. Remove from oven and let rest on the cookie sheet for 5 minutes.
  5. Remove to cooling rack.
