I’ve written about almost every conceivable form of coconut (watch out, coconut aminos information coming soon!). But coconut oil is the form that I use most often and have the most passion about. There are many brands to choose from. One of the brands I offer to clients, especially for weight loss and detoxification, is Tropical Traditions Gold Label Standard.

Types Of Coconut Oil

Two of the most popular types of coconut oil are virgin and expeller pressed. Virgin coconut oil has had minimal processing, and retains a mild coconut taste and aroma. Expeller pressed coconut oil has undergone more processing and is essentially flavorless and odorless.  Both products are available from Tropical Traditions click here.  I come back to the Gold Label Standard for the taste, but it’s always wonderful because  it is certified organic and cold-pressed using no chemicals and no high heats so there is no breakdown in the coconut oil which could cause free radical damage to the cells – the antioxidant properties are extremely high.  It also has no trans fats.  Amazingly, it’s not mass produced either.  The coconuts are grown by farmers in the Philippines using old-fashioned, traditional methods.  You can taste the love in the product and really is the highest standard of virgin coconut oil.

Saturated Fat in Coconut Oil

At one time, coconut oil was labeled a dietary troublemaker because it is high in saturated fat. But all saturated fat is not created equal.  Coconut oil is composed of medium chain triglycerides. These are digested and metabolized differently from other fats. Instead of being packed away into fat cells, they’re used to produce energy. In other words, they burn like carbohydrates instead of fat. The increase in energy production stimulates metabolism. As metabolism increases the rate at which you burn calories increases. So after eating a meal containing coconut oil, your level of energy is higher, your metabolism is running at an elevated level, and you burn calories at an accelerated rate.  Coconut oil produces energy, not fat.

Versatility of Coconut Oil

Because coconut oil is very stable it does not need to be refrigerated. Coconut oil melts at 76°F, becoming a clear liquid that looks like almost any other vegetable oil. Below this temperature, it solidifies and takes on a creamy white appearance, making it a wonderful lotion for your skin too (coconut oil is so versatile!). To liquefy hardened oil, simply immerse the bottom of the jar in hot water for a few minutes.

Make coconut oil your primary cooking oil. It is one of the best oils for higher heat cooking as it doesn’t break down easily and create free radicals. It has a moderately low smoke point, about 350 degrees. It can be used in just about any recipe that calls for vegetable oil, shortening, butter, or margarine. It is excellent for cooking. Unlike other vegetable oils, it’s very stable when heated, does not create toxic byproducts, and doesn’t break down easily so free radicals are less likely to be formed. That is why coconut oil is the oil I recommend to use when frying, roasting, or other high heat applications.
